  • 3 carrots, diced
  • 2 celery stalks, diced
  • 1 large onion, chopped
  • 3 medium potatoes, cubed
  • 6 cups beef broth
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 bay leaves
  • Optional: 1/2 cup green beans, peas, or corn

Instructions

  • Heat oil in a skillet and sear the diced beef until browned. Season with salt and pepper.
  • Chop the vegetables into even sizes for consistent cooking.
  • In a large stockpot or slow cooker, layer the seared beef, followed by vegetables.
  • Add the beef broth, tomato paste, Worcestershire sauce, bay leaves, and additional seasoning.
  • Simmer on low heat for 2-3 hours, stirring occasionally. Adjust seasoning as needed.
