- 1 lb chuck roast or stew meat, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 1 large onion, chopped
- 3 medium potatoes, cubed
- 6 cups beef broth
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 2 bay leaves
- Optional: 1/2 cup green beans, peas, or corn
Instructions
- Heat oil in a skillet and sear the diced beef until browned. Season with salt and pepper.
- Chop the vegetables into even sizes for consistent cooking.
- In a large stockpot or slow cooker, layer the seared beef, followed by vegetables.
- Add the beef broth, tomato paste, Worcestershire sauce, bay leaves, and additional seasoning.
- Simmer on low heat for 2-3 hours, stirring occasionally. Adjust seasoning as needed.
- Remove bay leaves before serving and garnish with fresh parsley.
Notes
- For a thicker soup, mash some of the potatoes directly into the broth.
- Feel free to swap vegetables to suit your taste or use what you have on hand.
