2 boneless chicken or pork cutlets

1 cup flour

2 eggs, beaten

1 ½ cups panko breadcrumbs

4 cups ramen noodles

6 cups tonkotsu, shoyu, or miso broth

Toppings: soft-boiled eggs, green onions, nori, corn, bean sprouts


Instructions

  1. Prepare the Broth: Simmer pork bones (for tonkotsu) or combine stock with soy sauce (for shoyu) or miso paste (for miso broth). Add garlic, ginger, and green onions for flavor.
  2. Cook the Noodles: Boil ramen noodles until al dente, then rinse and toss with sesame oil.
  3. Make the Katsu: Pound cutlets to ½-inch thickness. Dredge in flour, dip in egg, and coat with panko. Fry at 350°F until golden.
  4. Assemble: Place noodles in a bowl, pour hot broth over them, and top with sliced katsu and your favorite toppings.
