2 boneless chicken or pork cutlets
1 cup flour
2 eggs, beaten
1 ½ cups panko breadcrumbs
4 cups ramen noodles
6 cups tonkotsu, shoyu, or miso broth
Toppings: soft-boiled eggs, green onions, nori, corn, bean sprouts
Instructions
- Prepare the Broth: Simmer pork bones (for tonkotsu) or combine stock with soy sauce (for shoyu) or miso paste (for miso broth). Add garlic, ginger, and green onions for flavor.
- Cook the Noodles: Boil ramen noodles until al dente, then rinse and toss with sesame oil.
- Make the Katsu: Pound cutlets to ½-inch thickness. Dredge in flour, dip in egg, and coat with panko. Fry at 350°F until golden.
- Assemble: Place noodles in a bowl, pour hot broth over them, and top with sliced katsu and your favorite toppings.
Notes
- Use gluten-free noodles and panko for a gluten-free version.
- Store broth, noodles, and katsu separately for leftovers.
- Re-crisp katsu in the oven or air fryer before serving.
