Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a large bowl, cream butter, sugar, and honey until fluffy. Add eggs and vanilla extract, mixing well.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, alternating with milk.
- Gently fold in diced peaches.
- For the filling, mix cream cheese, powdered sugar, and vanilla until smooth.
- Spoon batter into liners, filling halfway. Add a dollop of cream cheese filling, then cover with more batter.
- Bake for 18–22 minutes or until a toothpick inserted in the cake portion comes out clean. Let cool completely.
- Frost with honey cream cheese frosting and garnish with peach slices or a drizzle of honey.
