Ingredients
Scale
- 2–4 grouse breasts (skin-on for extra flavor)
- 4–6 oz cheese (brie, blue cheese, cheddar, or goat cheese)
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 small shallot, finely chopped
- 1 tbsp fresh thyme or rosemary
- ½ cup white wine or broth
- Salt & black pepper to taste
Optional Add-Ins:
- ¼ cup heavy cream (for a cheese sauce)
- ½ cup mushrooms, sliced
- 2 slices bacon, crumbled
Instructions
- Prepare the grouse: Pat dry, season with salt, pepper, and herbs. Cut a small pocket for stuffing if desired.
- Sear the grouse: Heat butter in a skillet, sear skin-side down for 3-4 minutes, then flip and cook for 2-3 minutes.
- Deglaze the pan: Add shallots, garlic, and white wine or broth to lift flavors from the pan.
- Add cheese: Either stuff the grouse before cooking, melt cheese on top, or create a cheese sauce in the pan.
- Let rest & serve: Allow to rest for 5 minutes before serving with mashed potatoes or roasted vegetables.
Notes
- Soak grouse in buttermilk for 4-8 hours to remove excess gamey flavor.
- Brining in saltwater for a few hours helps tenderize the meat.
- For extra depth, add bacon or mushrooms for a smoky, earthy balance.
