1 bottle (750 ml) Prosecco (Brut or Extra Dry), chilled

Instructions

1. Prepare the Peach Puree:

  • Blend the peeled and pitted peaches in a blender or food processor until smooth. Strain through a fine-mesh sieve for a silky texture (optional).
  • Chill the puree in the refrigerator for at least 30 minutes.

2. Assemble the Bellini:

  • Pour 2 ounces of peach puree into a champagne flute.
  • Gently top with 4 ounces of chilled Prosecco.
  • Stir lightly if needed, but the bubbles will naturally mix the drink.

2. Garnish and Serve:

  • Add a thin peach slice or a sprig of mint to the rim of the glass for a decorative touch.
  • Serve immediately and enjoy!
