2 ripe peaches (white or yellow), peeled and pitted
1 bottle (750 ml) Prosecco (Brut or Extra Dry), chilled
Optional: Splash of peach liqueur, lemon juice, or fresh mint for garnish
Instructions
1. Prepare the Peach Puree:
- Blend the peeled and pitted peaches in a blender or food processor until smooth. Strain through a fine-mesh sieve for a silky texture (optional).
- Chill the puree in the refrigerator for at least 30 minutes.
2. Assemble the Bellini:
- Pour 2 ounces of peach puree into a champagne flute.
- Gently top with 4 ounces of chilled Prosecco.
- Stir lightly if needed, but the bubbles will naturally mix the drink.
2. Garnish and Serve:
- Add a thin peach slice or a sprig of mint to the rim of the glass for a decorative touch.
- Serve immediately and enjoy!

- Peach Substitutes: Use frozen peaches if fresh ones are out of season. Thaw before blending.
- Non-Alcoholic Version: Replace Prosecco with sparkling water or white grape juice.
