- 1 cup active sourdough starter
- 3 ½ cups all-purpose flour
- ¼ cup Dutch-process cocoa powder
- 2 tbsp honey or maple syrup
- 1 tsp salt
- ¾ cup warm water
- ½ cup semi-sweet chocolate chips
- 1 tsp espresso powder (optional)
- 1 tbsp baking soda (for boiling)
- 1 egg (for egg wash)
Instructions
- In a large bowl, whisk together the sourdough starter, warm water, honey (or maple syrup), and cocoa powder.
- Add flour and salt, then mix until a dough forms.
- Knead for 8-10 minutes (or use a stand mixer) until smooth and elastic.
- Fold in chocolate chips.
- Place dough in a greased bowl, cover, and let rise for 8-12 hours at room temperature.
- Divide dough into 8 pieces, shape into bagels, and let rest for 30-60 minutes.
- Bring a large pot of water to a boil, add baking soda, and boil bagels for 30 seconds per side.
- Place on a baking sheet, brush with egg wash, and bake at 400°F (200°C) for 20-22 minutes.
