- 16 oz (2 blocks) cream cheese, softened
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 2 large eggs
- 1 tbsp cinnamon
- 1/2 cup brown sugar, packed
- 1/4 cup unsalted butter, melted
- 1 package cinnamon roll dough (or homemade equivalent)
- Optional: 1/4 cup chopped pecans, caramel drizzle, cream cheese glaze
Instructions
- Preheat your oven to 325°F (163°C).
- Soften the cream cheese and allow the eggs to reach room temperature.
- Beat cream cheese, sugar, and vanilla extract until smooth. Gradually add eggs one at a time.
- Combine melted butter, brown sugar, and cinnamon to make the swirl mixture.
- Layer cinnamon roll dough at the bottom of a springform pan, pour half the cheesecake batter, add swirl, and repeat layers.
- Bake in a water bath for 50-60 minutes until the center slightly jiggles.
- Cool for 1 hour, then refrigerate overnight before serving.
Notes
- Avoid overmixing the batter to prevent cracks.
- For an extra indulgent twist, top with cream cheese glaze or caramel drizzle.
