Description

  • 1 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1 tbsp cinnamon
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 package cinnamon roll dough (or homemade equivalent)
  • Optional: 1/4 cup chopped pecans, caramel drizzle, cream cheese glaze

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Soften the cream cheese and allow the eggs to reach room temperature.
  3. Beat cream cheese, sugar, and vanilla extract until smooth. Gradually add eggs one at a time.
  4. Combine melted butter, brown sugar, and cinnamon to make the swirl mixture.
  5. Layer cinnamon roll dough at the bottom of a springform pan, pour half the cheesecake batter, add swirl, and repeat layers.
  6. Bake in a water bath for 50-60 minutes until the center slightly jiggles.
  7. Cool for 1 hour, then refrigerate overnight before serving.
