  • Salt and pepper to season

Honey Glaze

  • 150g unsalted butter
  • ½ cup honey
  • 3 garlic cloves, minced

Topping

  • 1 cup dried cranberries (soaked in orange juice)
  • 1 cup slivered almonds (toasted)
  • 1 pomegranate (seeds)
  • 1 tablespoon olive oil
  • Fresh parsley, chopped

Creamy Dill Sauce

  • 1½ cups sour cream
  • ½ cup fresh dill
  • Zest of one lemon

Instructions

  • Prepare the Salmon

    • Preheat your oven to 350°F (180°C).
    • Line a baking sheet with foil and parchment paper.
    • Position the salmon fillet skin-side down and season generously with salt and pepper.
  • Make the Honey Glaze

    • Combine butter, honey, and minced garlic in a small saucepan.
    • Heat gently over medium heat, stirring occasionally. Simmer for 2–3 minutes, then drizzle evenly over the salmon.
  • Bake the Salmon

    • Wrap the salmon in foil, creating a sealed packet.
    • Bake for 15 minutes, then open the foil and broil for 10 minutes to caramelize the glaze.
  • Prepare the Topping

    • Soak cranberries in orange juice for 10 minutes and drain.
    • Toss cranberries, almonds, pomegranate seeds, parsley, and olive oil in a bowl.
  • Assemble and Serve

    • Spread the creamy dill sauce over the baked salmon.
    • Add the cranberry-almond topping evenly. Garnish with lemon wedges.

Notes

  • Use fresh salmon for the best flavor.
