  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 8 ounces (225g) semi-sweet or dark chocolate, finely chopped (for ganache)
  • ¾ cup (180ml) heavy cream (for ganache)
  • 1 tablespoon unsalted butter (optional, for ganache)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  • In a medium bowl, whisk together the flour, salt, and baking powder. Set aside.
  • In a heatproof bowl set over a pot of simmering water, melt the butter and chocolate together. Stir until smooth. Remove from heat and let it cool slightly.
  • In a large bowl, whisk the sugar, eggs, and vanilla until pale and fluffy. Slowly add the melted chocolate mixture, whisking constantly.
  • Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined.
  • Pour the batter into your prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Cool completely.
