- 1.5 lbs beef (lean cuts)
- 0.5 lbs pork (fatty cuts)
- 2 tbsp toasted coriander seeds
- 1 tsp ground nutmeg
- 0.5 tsp ground cloves
- 1 tbsp black pepper
- 2 tbsp vinegar
- 1 tbsp Worcestershire sauce
- Natural hog casings
Instructions
- Dice the beef and pork into small cubes, then chill to 32–34°F.
- Grind the meat coarsely using a meat grinder.
- Toast coriander seeds, then grind them into a coarse powder.
- Mix the meat with all spices, vinegar, and Worcestershire sauce.
- Soak the hog casings in warm water and rinse thoroughly.
- Stuff the meat mixture into the casings and form a spiral shape.
- Grill over medium heat (400°F) until internal temperature reaches 160°F.
Notes
- Rest the boerewors for 2–3 minutes after cooking for better flavor.
- Store unused boerewors in vacuum-sealed bags for up to 3 months in the freezer.
