Ingredients

  • 1.5 lbs beef (lean cuts)
  • 0.5 lbs pork (fatty cuts)
  • 2 tbsp toasted coriander seeds
  • 1 tsp ground nutmeg
  • 0.5 tsp ground cloves
  • 1 tbsp black pepper
  • 2 tbsp vinegar
  • 1 tbsp Worcestershire sauce
  • Natural hog casings

Instructions

  • Dice the beef and pork into small cubes, then chill to 32–34°F.
  • Grind the meat coarsely using a meat grinder.
  • Toast coriander seeds, then grind them into a coarse powder.
  • Mix the meat with all spices, vinegar, and Worcestershire sauce.
  • Soak the hog casings in warm water and rinse thoroughly.
  • Stuff the meat mixture into the casings and form a spiral shape.
  • Grill over medium heat (400°F) until internal temperature reaches 160°F.

Notes

  • Rest the boerewors for 2–3 minutes after cooking for better flavor.
  • Store unused boerewors in vacuum-sealed bags for up to 3 months in the freezer.
