Description

Soft, chewy bagels packed with nostalgic banana flavor and topped with a crunchy cinnamon-sugar crust. The perfect breakfast treat!


Ingredients

  • 2 medium ripe bananas
  • 3 ½ cups all-purpose flour
  • ¼ cup Greek yogurt (optional)
  • 2 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 packet (2 ¼ tsp) instant yeast
  • ¾ cup warm water
  • For the Cinnamon Crunch Topping:
  • ¼ cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp melted butter

Instructions

  1. Mash the bananas in a large bowl or stand mixer.
  2. Add warm water, brown sugar, and yeast; let sit for 5 minutes until foamy.
  3. Mix in Greek yogurt, cinnamon, salt, and flour until a shaggy dough forms.
  4. Knead for 8-10 minutes (or 5 minutes in a stand mixer) until soft but slightly sticky.
  5. Place dough in a greased bowl, cover, and let rise for 1 hour.
  6. Punch down dough and divide into 8 pieces.
  7. Shape each piece into a bagel by poking a hole in the center.
  8. Boil bagels in a large pot of water for 30 seconds per side.
  9. Mix brown sugar, cinnamon, and melted butter for the topping.
  10. Brush boiled bagels with butter and press on the topping.
  11. Bake at 375°F (190°C) for 20-22 minutes until golden brown.

Notes

Best served warm with cream cheese, honey, or peanut butter. Freeze extras for later!
